Saturday, October 27: a rainy and cold day, but then warmed and brightened by 8 nice food & travel bloggers who decided to come to visit Todi with Elisa from Todiguide.com and then chose the Hotel Bramante as  location for a wine tasting and for a fun cooking class.

Our chef Aldo, helped by the excellent Luigi, had carefully prepared the room and the worktable to welcome our guests and make them feel at home:  here’s the decorations in fall style! You like it?

The tasting included a white Viognier and a Merlot (San Rocco winery in Todi)  and Montignanello, a red wine produced with grapes sagrantino in Massa Martana (Todi, cant. Leonucci).

All wines have been matched with salami of Cinta Senese , carefully chosen by Aldo, and local cheeses (fresh and aged pecorino + pecorino di fossa, a cheese aged in a kind of underground hole ). For each wine there’s its food!

The cooking class was really fun! Aldo taught  bloggers how to make our typical Umbrian flat bread, the Torta al Testo,  also known in Todi with the name “Pizza under the Fire”.

Then it was the turn of men: Ludger (Germany) and Rolando (Chile). They  were very good too!

Since the dough had  to rest for a few hours, Aldo had already prepared in the morning other doughs which we then cooked at the time to accompany cured meats and cheeses.

Certainly the highlight of the afternoon was the hot pizza topped with thin strips of fresh bacon … I wonder why it finished so quickly!
