The kitchen of the restaurant of Hotel Bramante is entrusted to chef Aldo Mosca, Pugliese by birth and Umbrian by choice!

After graduating from the Hotel Institute of Bari, Aldo left his native region to gain work experience. His opportunities took him to hotels and restaurants in various parts of Italy, such as Sardinia, Madonna di Campiglio, Livigno, Sirmione, and also abroad to Switzerland and Austria.

Our young chef arrived at the Hotel Bramante near its opening in 1982, and from that moment began the union that would bring Aldo and the Hotel Bramante’s cuisine to be known and appreciated by the world.

The history of the restaurant at the Hotel Bramante has many highlights, starting with the Festival of the Etruscans at the very beginning of the 1980s, where waiters dressed in Etruscan clothing served the National Liberal Foundation.

Since 2003, the National Liberation Foundation has also used the Hotel Bramante as the seat of their National Congress.

In 2004, Aldo and his staff were invited to cook for Putin at the Hotel Astoria in St. Petersburg during the week of the Cooking Festival.

During the past 30 years many companies have chosen the Hotel Bramante as the location for their corporate events; the kitchen has always proven to be the jewel in the crown that has made our guests fall in love with the flavors of Umbria.
